Is the summertime heat leaving you craving ice cream or some other cold treat?  Aicacia Young from Climb Healthy and author of our Rock Climbing Nutrition Guide just posted a recipe for some coconut cherry vanilla popsicles that look like the perfect healthy summer treat.

Not only will these popsicles help cool you off and satiate your sweet tooth, they also have some nice health benefits for climbers.

“Cherries are awesome because they contain anthocyanins – antioxidants that can reduce migraines, pain, and inflammation in your body. Cherries also contain melatonin, which can improve your body’s circadian rhythm (or internal clock).” – Aicacia Young

These popsicles are really easy to make and are even both vegan and paleo.  Here are the ingredients:

  • 1 can of full fat coconut milk, refrigerated overnight
  • 1 cup of fresh, pitted cherries
  • 1 tsp of vanilla extract
  • 2 Tbsp of maple, brown rice, or tapioca syrup (optional)
  • Popsicle molds or small solo cups and popsicle sticks
