Is it starting to feel like summer where you are yet? If not, I bet you’re ready for it?

In this spirit of sunshine and warmer temperatures, here is a delicious smoothie bowl breakfast recipe from RDN Aicacia Young’s site, climbhealthy.com. Aicacia is also the author of our Rock Climbing Nutrition eBook, which is definitely worth checking out if you’re wanting to learn more about what to eat for climbing.

The list of ingredients is pretty simple too! You’ll have to read her article to see what she recommends for yummy toppings- hence pouring the smoothie in a bowl:)

Ingredients (Makes 1 smoothie bowl):

  • 1½ cups frozen pineapple
  • 1 ripe frozen banana
  • 1 cup greens of your choice (I like a baby kale mix, but spinach or regular old kale are also great.)
  • ½ cup unsweetened coconut milk (The kind in the carton, not the can.)
  • 2 teaspoons matcha green tea powder
  • Squeeze of fresh lime juice (optional)

Enjoy!
